Course Description:

In this course we will cover the introductory concepts of human nutrition including the nutrients, how the body utilizes them, how they are obtained through food and supplements and recommendations for intake to promote optimal growth, health and prevention of disease, throughout the lifespan. Readings, homework and chapter quizzes will be done outside the classroom. We will have weekly class meetings in which we will discuss important topics such as weight control, sports nutrition, dietary supplements, food safety and sustainability. You will explore your own eating habits and learn to evaluate your own dietary intake. In addition, we will take excursions in the community and on campus to learn more about our food environment including going to grocery stores, dining halls and other campus venues, and in the community.
